Green tea is made the leaves of Camellia sinensis, the tea plant. Unlike black tea, green tea has undergone minimal oxidation (see the tea processing chart). Green tea has been traditionally been the tea of choice in China, Japan and Taiwan, but it is rapidly gaining popularity in the Western world because it caries more health benefits.
